The new Pommery Apanage Blanc De Blancs NV is the first Cuvée crafted by 10th Cellar Master Clement Pierlot. As the name suggests, this Blanc De Blanc, or white wine from white grapes, is made from 100% Chardonnay grapes from the northern terrain of the Montagne de Reims and the hills of Nogent l’Albesse. The quality of this champagne shines through its exemplary flavours. Every bottle of Champagne Pommery spends three years in the chalk cellars, hidden in the Domaine Pommery in Reims, followed by another six months after it has been disgorged.

Just as Madame Nathalie Vranken describes her role at Pommery as “multifaceted, like a Swiss knife”, the Pommery Apanage Blanc De Blancs NV champagne is also diverse and unique. Pale and golden, with sustained effervescence, this champagne exudes aromas of fresh citrus and subtle floral notes including jasmine. Take a sip and enjoy fresh apple followed by subtle flavours of yellow grapefruit. This champagne is ideal in warmer weather and pairs especially well with seafood.

The National Gallery of Victoria Garden Restaurant provided a tranquil scenery for the launch of the Pommery Apanage Blanc De Blancs NV. A specially curated menu for the occasion matched seafood and Champagne Pommery harmoniously. To start was beautifully fresh lemon verbena cured ocean trout with finger lime, coconut, salmon roe and saltbush. Next, the seared scallops with miso pumpkin, bok choy, sesame and ginger soy dressing was a scrumptious combination of flavours and textures. The sweet ending was Petit Fours of passionfruit and mango chocolate cup and coconut and guava tart.
