Episode 1 airs on Wednesday 1st August at 8pm on SBS and SBS on Demand, as Maeve journeys into the top end of Australia to seek out wild barramundi local fisherman Billy Boustead and his chef friend, legendary Darwin and Alice Springs restaurateur Jimmy Shu (Hanuman). It’s from here that Maeve and her crew journey to the Sydney Fish Market with De Costi’s chief buyer Carmelo Lombardo, accompanied by renowned seafood chef Steve Hodges. After discovering how sea salt is produced in the Spencer Gulf South Australia, Maeve takes a closer look at how rock salt is used in a classic Sicilian recipe for whole baked snapper at Olio Kensington Street.
