This hidden Surry Hills bar is serving up a truffle-inspired Squish Burger

The Squish burger moves from Bondi Beach to Surry Hills and gets a luxurious truffle-inspired makeover.

Executive chef Monty Koludrovic of Icebergs Group first broke the internet with his Squish Burger back in late 2017. It quickly become a hot item on the menu at Bondi Beach Public Bar, using an iron press to condense the decadent double-patty bacon cheeseburger. The result? A concentrated mouthful of burger goodness.

Now, the Squish Burger is travelling from the sunny shores of Bondi Beach to the bustling inner city bar scene in Surry Hills. You can find it inside the Dolphin Hotel, at the secretive attic bar known as Scout Sydney. Tucked away on the top floor of this much adored watering hole, Scout is now playing host to this devilishly delightful burger, available Tuesday through to Sunday.

In keeping with the winter season, the Squish Burger has also been given a luxurious truffle upgrade. Truffle cheese and a truffled burger sauce can be found nestled between the soft brioche buns, a Polish-style pickle giving the creation an acidic kick.

It joins another new Monty creation for Scout, the Scout Pan Pizza. Paying homage to the classic Chicago deep dish pizza, this particular pizza comes covered in garlic and fresh mozzarella with the option of prosciutto.

While the new food menu is set to bring in burger lovers far and wide, Scout Sydney was quick to develop a reputation for its boundary-pushing cocktails. Matt Whiley, one of the world’s most celebrated mixologists, constantly evolves the drinks list for the antipodean version of his award-winning Scout bar London. Think banana-infused wine, a green Negroni and a camel milk cocktail, just to name a few.

Scout’s new food items are available from Tuesday 30th July, Tuesday through to Sunday.
