Frank Mac’s Gin Bar Opening In The Rocks This July

The Rocks will score another impressive cocktail experience by the owners of Sydney’s favourite whisky bar, The Doss House.

Every month, we see an array of sparkly new bars and drinking experiences opening across Sydney, but there’s some that get us more hyped than others. Exhibit-A is the brand new gin and cocktail bar set to open on George Street this July, Frank Mac’s. With the team of hospitality heavyweights from the much-loved whisky bar, The Doss House, behind the concept, we know it’s going to be something special.

After opening The Doss House in 2018, Co-owners Ciara Doran and Eoin Daniels ignited their passion for transforming heritage-listed spaces into character-driven venues. The designers from Buck & Simple have respected the original history of the building while turning it into something new and exciting, just as they did at The Doss House and other iconic Sydney bars like The Rook and The Winery. The sandstone walls of Frank Mac’s will become home to a 120 person capacity bar. With seating inside and outside, across two levels and into a back courtyard, this is not a bar, but a dining destination. The downstairs space is set to be a more cosy vibe with vintage leather banquettes, lounges, low tables and a fireplace to keep you warm this winter. The ground level highlight will be the almost 5-metre long bar, which is where all the magic happens. You’ll be able to pull up a stool and chat all things botanical gins with the bartenders.

“We want Frank Mac’s to feel comforting and familiar yet it also to be the kind of bar you’d travel across town to drink at,” said co-owner Ciara Doran. “When you consider The Rocks already has the likes of The Doss House, Maybe Sammy plus Hickson House Distilling Co which will open later this year with their gin distillery, Frank Mac’s will make it an even more compelling neighbourhood to bar-hop your way around.”

The cocktail, gin and wine list have been carefully curated by beverage professionals – Beverage Manager Daniel Strahand and General Manager Alex Rogerson. Frank Mac’s will offer one of the biggest botanical collections available in Sydney with over 8- juniper blends sourced from all over the globe. Expect drinks like the Mac Martini, a vesper style martini made with Bombay Dry gin, Eristoff vodka, Lillet, Antica Formula vermouth, and house-made olive brine, infused with lemon myrtle, kaffir lime and bay leaves. The Brandy Alexander with chilli infused coco pop, washed brandy milk punch, served with smoked cream and dusted nutmeg. No cocktail is a simple concoction. Of course, G&T die-hards will still be able to get their gin of choice served with tonic, and ingredient combinations like raspberry and rosemary or grapefruit and thyme. If you’re not a gin lover (who even are you), you will also find a strong international wine list that is sure to tickle everyone’s fancy.
