French brasserie Ananas is making its comeback at the original Rocks location on Wednesday, May 6, now under Hunter St. Hospitality’s management.

The restaurant first made waves in 2012 as one of Sydney’s glamorous, champagne-fuelled brasseries, and this new chapter aims to recapture that buzzy energy with a more approachable style.

Executive Chef Mike Flood, who spent years leading the kitchen at Felix, is steering the menu with influences drawn from across France. The launch offering leans into classic Paris brasserie territory with deeper sauces and richer plates, before shifting south as spring arrives to embrace brighter flavours and more olive oil.

The restaurant is open for lunch and dinner daily, with bookings available now. They’re also opening for Mother’s Day with a Champagne-led celebration featuring generous French plates in that signature informal yet elevated setting The Rocks crowd has been missing.
