Taking up residence on Jones Bay Wharf, Sala is serving up nostalgic Italian flavour with modern flare.  

Home to two bespoke private dining rooms – including one with direct waterfront access and a terrace – Sala’s 160-seat space offers a stunning harbourside backdrop led by Mediterranean design cues and a love of Australian produce. Bright white clay, stone and marble embellish the 100-year-old, heritage-listed space, perfectly juxtaposed with dark timber accents of the building’s original bones. The result is a coastal-chic backdrop to enjoy the best of Australian seafood this summer.

Head chef Michael Lewis has embraced authentic Italian cooking techniques throughout the menu utilising an expanded pantry to add a signature twist to each dish. Menu highlights include; Russo’s crispy risoni fingers – usually an Italian classic for small children – reimagined with sophisticated ingredients of caviar and parmesan for a playful take on a nostalgic favourite; and Sala’s Piemontese hazelnut, featuring locally sourced chocolate from Jessica Pedemont’s Chocolate Artisan in Haberfield.

The wine list mirrors the locally sourced sentiment with a purposeful effort to feature Italian varietals sourced not only from overseas but from local producers too. The cocktail menu pours up a full Negroni and Amari Sour collection for an authentic Italian sip, as well as coastal-inspired signatures like the Oyster Shell Martini with Never Never Oyster Shell gin with pine nut, basil, and olive oil.

Sala has been born from a wealth of experience from celebrated hospitality couple Kerrie and Con Dedes (Dedes Waterfront Group), and executive chef Danny Russo (The Russolini Group). The collaborative creation effortlessly marries the welcoming Greek heritage of the Dedes Group and the Dedes family, the Italian culinary mastery from the Russolini Group, and the heritage of the iconic harbour and the building itself.
