Bistro George is a one-hatted restaurant on Level 1 of Jacksons on George, just a short walk from Circular Quay on George Street. It's a grand, sophisticated dining room with capacity for 120 guests, equally suited to a casual work lunch, a long celebratory dinner, or a private event in the Private Dining Room which looks out over the CBD through floor-to-ceiling windows.

Head Chef Steven Sinclair's European-meets-modern Australian menu leans on local producers and a diverse wine list. Start with the chicken liver parfait with onion and brioche, or the yellowfin tuna tartare with avocado, furikake and yuzu kosho. The pasta list is strong with a rigatoni al gin with pomodoro and fermented chilli that needs your attention. From the grill, the steak frites with O'Connor Black Angus scotch fillet and sauce au poivre is the reliable order, while the Westholme Bistecca alla Fiorentina is the one for a big occasion.
