Executive Chef Alessandro Mandelli (Alpha, Grana) leads the kitchen, plating French and Italian-leaning dishes grounded in simplicity, flavour, and flair. Think WA marron wrapped in crispy kataifi pastry with chilli mayo, wagyu short rib agnolotti slicked with saffron butter, and a golden veal Milanese served the traditional way.
