Founder Of Hatted Restaurant Arthur Adds Jane To His Repertoire In Surry Hills

Experience a celebration of Australian ingredients and a peek into the colourful life of Tristan Rosier’s grandmother, Jane.

Over the years, Surry Hills has transformed into a bustling dining destination brimming with charming cafes, swanky bars and restaurants headed by the cities most renowned chefs. Amongst the line-up is Arthur, a restaurant and wine bar owned by hospitality heavyweight Tristan Rosier (ex-Biota & former Dead Ringer chef). Nestled on leafy Bourke Street, Arthur quickly became a neighbourhood anchor as one of the best finer dining destinations in the inner-city. After earning consecutive Chef’s Hats in the 2020 and 2021 Good Food Guide Awards, Rosier has turned his attention to a lavish new venue located a stone’s throw from Arthur at number 478.

Head north on Bourke Street until you discover a beautiful restored brass-framed door. The restaurant is named after Rosier’s adored grandmother, Jane and emulates the spirit of a 1970s brasserie. Luchetti Krelle was behind design making sure the interiors followed the theme boasting rust corduroy booth seating, textured white walls, marble accents and low lighting. This venue is close to Rosier’s heart and it’s clear there wasn’t an expense spared in the design and decor.
Arthur Sous Chef Victoria Scriven (formerly Ester) is at the helm of the kitchen. Scriven’s culinary precision positioned her as one of the top five finalists in the 2021 Good Food Guide inaugural Young Chef of The Year awards. Together, Rosier and Scriven will execute an all-Australian menu highlighting sustainably farmed ingredients and innovative ways to ensure a zero-waste policy. The menu is designed to be shared with bites including Jane’s new signature Cocktail Honey Bugs with a tarragon butter sauce, Zucchini Flowers with macadamia and dill sauce and Kangaroo Tartare with bush tomato and shoestring fries. Large dishes include Murray Cod with native curry and saltbush and a 500g Lamb Barnsley Chop with rosemary and mizuna.
For dessert, Rosier replicates his favourite childhood cake with vanilla sponge, pink icing, layers of meringue, bay leaf cream, candied rosella flowers, strawberries and ruby chocolate clusters.

Kyle Reno Lenci (formerly Restaurant Hubert) brings his sommelier expertise from Arthur to create an Australian dominated wine list. The focus is on smaller producers that favour alternative varietals, unique wine-making techniques, biodynamic and sustainable producers. There are 80 bottles to choose from and 25 by the glass so you can taste your way through the list.

The cocktails continue to pay homage to Australia. You’ll find Mixologist Evan Stroeve behind the marble bar (formerly Bulletin Place) putting twists on classic cocktails. The menu features the Australiano, a play on the classic American but instead made with Australian liqueurs and fortified wines and the Summer Daiquiri to bring back your nostalgic summer memories.
