To begin, delve into the beautifully crafted Nigiris or assortment of signature ‘Ceviches’ and ‘Tiraditos’ (Peruvian-style sashimi). Venture further to experience ‘Anticuchos’, the beloved charcoal-grilled skewers that never fail to captivate palates. Each dish is not only a symphony of flavours, but also a visual masterpiece. Complementing the dishes are an assortment of cocktails, drawing inspiration from the roots of Japan and Peru. Guided by conversations centered around preferred flavours, we were fortunate enough to have Luis Guzman, co-owner of Lima, craft our cocktails himself. Guzman explains, "Our initial aim with Folklor was to create a place where people could connect with the unique fusion of Chinese, Japanese, and Peruvian cuisines. Now, as Lima, we are elevating that experience by bringing Hector's passion for Nikkei cuisine and culture into the spotlight, celebrating his personal heritage and the rich culinary history of both Japan and Peru." The evolution from Folklor to Lima stands as an exciting new chapter in the culinary journey of Guzman and Chunga; a testament to their trailblazing status in Sydney's restaurant game. Upholding their reputation as taste-pioneers, they continue to introduce innovative flavours to the city's dining scene. Lima is open Tuesday to Thursday from 5pm - 10pm, Friday and Saturday from 12pm - 3pm and 5pm 11pm, and Sunday from 12pm - 3pm and 5pm - 9pm. Find out more here.
