Sydney’s pizza scene is about to get a serious upgrade. Opening on 16 May 2026, Pizza Studio Tamaki is the first Australian outpost of the Tokyo cult favourite, taking over a sleek new space at 259 George Street in the CBD.
Founded by acclaimed pizzaiolo Tsubasa Tamaki, the restaurant has earned a devoted following in Tokyo for its refined approach to Neapolitan pizza. Drawing on years of training at legendary Tokyo pizzerias including Savoy and Pizza Strada, Tamaki has developed a style that honours Italian tradition while embracing Japanese precision.
At the heart of the offering is a 30-hour fermented dough made using a proprietary Japanese flour blend and baked in a wood-fired oven at blistering temperatures. The result? A crust that’s crisp on the outside, soft and airy within, and impressively light to eat. Every detail, from the starters to the tightly curated drinks list, is designed to complement the pizza rather than compete with it.
