Three Blue Ducks Rosebery hosts a Roku Gin cocktail pairing experience with a bespoke Japanese menu inspired by the new Bellingen outpost.
In a delightful union of culinary expertise and exquisite spirit craftsmanship, Three Blue Ducks and House of Suntory have something truly special in store for Sydney foodies. This exclusive collaboration pairs the acclaimed Roku Gin with the culinary artistry of chef, author, and co-founder of Three Blue Ducks, Darren Robertson. Set against the backdrop of Three Blue Ducks Roseberry, this limited-time pop-up event will bring the distinctive Asian flavours of the recently opened Bellingen outpost to Sydney for just two exclusive sessions this coming November.
At the heart of this experience is a meticulously curated four-course menu, designed with passion and precision by none other than Darren Robertson himself. The menu showcases the best of each season, with a strong emphasis on Japanese-inspired flavours. They’ve dropped a sample menu and we’re loving the sound of oysters with ginger and cherry blossom; asparagus with spanner crab mayonnaise and gyokuro togarashi; raw beef with sanshō pepper, green onion, and nashi; barramundi with fragrant dashi, sencha furikake, and sea greens, and a decadent yuzu tart for dessert with soft meringue and creme fraiche.
Elevating this experience is the artful pairing of Roku Gin cocktails with each course. A favourite among bartenders, Roku Gin is celebrated for its delightful combination of six Japanese botanicals including sakura flower, sakura leaf, sencha tea, gyokuro tea, sanshō pepper, and yuzu. The versatility of this gin serves as an ideal base for crafting cocktails, with each cocktail seamlessly complementing the Japanese flavours featured throughout the menu.
Guests will be guided through the tasting experience by the chef himself, Darren Robertson, and James Buntin, Roku Gin Brand Ambassador. This rare opportunity allows attendees to gain insights into the flavour pairings and the creative mastery behind both the cuisine and the cocktails.
In the words of Darren Robertson, “This partnership with Roku Gin is a no-brainer given our shared approach to cooking and creation, along with my previous experience in Japanese cuisine. And now having the opportunity to bring the Asian cooking techniques from the menu at our new Bellingen restaurant to Sydney is so exciting.”
