There’s something brewing in The Rocks—and it’s not just a well-shaken martini.
Launching today Friday April 11th, The Collective is the latest move from Hunter St Hospitality, transforming a sprawling 1,800-square-metre heritage space into a curated precinct of food, drink, and all-day lounging.
Built within restored 19th-century sandstone buildings (the kind you usually just walk past and admire), The Collective folds in familiar favourites like Saké and The Cut Bar & Grill, while unveiling three new venues that give this historic strip a modern jolt: The Dining Room, The Garden, and Tailor Room.
The Dining Room
Housed in a former 1881 wool store, this space is moody and majestic. There’s sandstone, there’s soft leather booths, there’s a wine cellar that’s one “I just popped in for one glass” away from becoming your second home. Behind the pans: a dream team of chefs, including Santiago Aristizabal (ex-Ester), Andy Evans (Ms.G’s), and Shimpei Hatanaka (Saké), with Executive Chef Mike Flood running point. Expect towering seafood platters, wagyu tomahawk steaks, and a wine list that’s got more depth than your last situationship.
The Garden
Part inner-city courtyard, part European terrace dream. This open-air oasis is where you start your day with a crab omelette, wind down with a king prawn roll, then roll into cocktails under the stars. Rosella spritz in hand, shoes optional.
Tailor Room
Small but mighty, this 24-square-metre cocktail bar is dressed to impress. Named after its textile roots, the drinks menu riffs on textures: Silk, Velvet, Corduroy—each cocktail designed with flavour and feel in mind. Think intimate, sultry, and a little bit cheeky. Like your favourite first date spot, but with better lighting…
“Hospitality precincts are having a moment,” says CEO Frank Tucker. “But this one? We built it to be something you stumble upon and don’t want to leave.”
Whether you’re chasing a long lunch, date night, or a bar hop that doesn’t involve Uber, The Collective is a worthy addition to Sydney’s evolving food map and we’re exicted to see this one grow.
