Sometimes a staycation is all you need to fall back in love with your city. The building itself dates back to 1912 but it has been given new life by the architects from Hassell Studio and designer Matt Sheargold. Structurally it is quite industrial with the original exposed wooden means and timber floors. However, the interiors give the place a fashionable edge with plush seating, bright colours, contemporary art and cutting edge technology scattered throughout the hotel.

The hotel also has its very own restaurant, Alibi Bar & Kitchen, that is pushing the boundaries of innovative dining in Sydney. The menu is 100% plant-based, designed by US celebrity chef Matthew Kenney. The menu features dishes including Lasagne with tomato marinara and macadamia ricotta, Sea Terrain with broad beans, seaweed foam and chive oil, Smoked Choclo with sweet potato gnocchi, amaranth and sorghum, and Strawberry Shortcake with lemon verbena ice cream.
Cocktail enthusiasts can lap it up at the lobby bar. Choose from the White Satin with Ketel Vodka, Licor 43, Creme de Peche Liqueur and artisanal oat milk, the Honey Honey with Roku Japanese Gin, vegan honey, macadamia oil, Brookie’s Macadamia and Wattlesee Liqueur and Amaro Montenegro, and the Jungle Love with Tamarind-infused Ketel 1 Vodka, housemade tepache, lemon juice, salted pineapple and caramel syrup.
