The mastermind behind Nopales is the acclaimed chef Santosh. His impressive tenure has taken him through esteemed establishments across Sydney, where he honed his skills and passion for Mexican and South American cuisine. Previously, Santosh served as Executive Head Chef at Tommy’s Mexican in Manly, Executive Chef at The Butcher’s Block in Wahroonga, and Head Chef at St Alma in Freshwater, among other notable roles.

At Nopales, Santosh brings his vision to life with a deliberate focus on fresh, seasonal ingredients. The menu offers a delightful balance of classic Mexican and South American favourites, alongside innovative creations that push the boundaries of flavour.
