Laval Hunter Valley opens in late 2027 on the historic 165-acre Lindeman Estate in Pokolbin, bringing 65 pavilion-style villas immersed within a working vineyard with 360-degree valley views.
Justin North leads the culinary program, with the signature restaurant Vallery delivering an evolving Mediterranean menu inspired by Provence, coastal Spain, and Southern Italy, with subtle Japanese influences. An on-site kitchen garden supplies heirloom produce and local botanicals directly to the restaurant. Poolside, La Vida brings vibrant Cali-Mex flavours and sunset drinks, while The Lobby Bar anchors the social scene with curated beverages and share plates.
Beyond dining, expect one of the world’s largest collections of Gillie & Marc sculptures, a 1,000-square-metre Veraia Spa with longevity-led treatments, and a 10,000-bottle wine cellar celebrating Hunter Valley heritage. This is luxury regional tourism, elevated.
