House Made Hospitality Opens Etheus: A Greek Restaurant in Bondi

House Made Hospitality is breathing new life into the beachfront dining room with the opening of Etheus.

Etheus is a flame-driven Greek grill inspired by the rich, soul-warming food traditions of Greece’s coastline.

Executive Chef Chris Benedet and Head Chef Stav Stavrou have developed a menu centred on open-flame cooking, generous shared plates, and traditional Greek flavours. While the outdoor sibling venue Promenade Beach Bar remains unchanged, Etheus sharpens the identity of the main restaurant, introducing Bondi to slow afternoons filled with spanakorizo, souvlaki, and rakomelo by the sea.

  • What to Eat: Go for the chtapodi (chargrilled octopus with ouzo aioli) or the tonos (raw tuna with dakos and black-eyed beans)
    What to Drink: Try the rakomelo, a spiced Greek honey liqueur served warm as a traditional digestif.
