An Iconic Balmain Pub Returns After Two Year Closure

Get ready to raise your glasses, because The Dry Dock, Balmain’s most beloved neighbourhood pub, is about to make a grand comeback! After a hiatus of almost two years, the iconic spot is undergoing a major renovation and restoration, officially bringing back the good times to Balmain Peninsula. 

Originally opened in the 1850’s, The Dry Dock was the watering hole that once hosted Mort Bay’s dock workers. Keeping this piece of history within its restoration, the heritage-listed pub will still retain its classic charm, whilst aiming to be the ultimate destination for generations to come. Amongst this, is an incredible food and drinks offering that will raise the bar to new heights. 

The pub will house three distinct spaces, each with its own distinct flair and individual style. A classic public bar accommodates up to 90, designed for comfort and charm. Then there’s a refined lounge bar seating up to 120, perfect for unwinding and soaking in the atmosphere. Finally, there’s a separate dining room where you can enjoy shared and substantial plates from the delicious menu (all with great music of course).

At the helm of the kitchen is Ben Sitton, appointed as The Dry Dock’s Head Chef. Sitton’s culinary journey is impressive, including his roles as Co-Head Chef at the esteemed Felix, Head Chef of Uccello (part of the Merivale group), and his position as Senior Sous Chef at the iconic Rockpool Bar & Grill. Sitton will be leading the menu in the Dining Room, highlighting European-influenced food with a French touch. The food is produce driven, with classic techniques focused around a Charcoal Grill, a style of cooking that Sitton is renowned for. To pair, there’s an extensive wine list, with premium spirits, classic cocktails, and 12 beers on tap featuring the best local breweries.

Tasked with this ambitious renovation is Peninsula Hospitality, made up of current and former residents of Balmain, who share a vision of ensuring The Dry Dock retains its place as a cornerstone of the community. “I could immediately see the potential of The Dry Dock to combine a great dining concept with a classic pub experience. It was a shared vision of wanting to create an elevated pub that we believe people are looking for today” Peninsula founder James Ingram.
