Sydney’s most anticipated new hotel bar, Bar Julius, has officially opened, bringing a sophisticated, European-style dining and drinking experience to the heart of Redfern. Located en route to The EVE’s lobby on leafy Baptist Street, this 100-seat venue is the latest creation from Liquid & Larder, offering seamless all-day continental dining with their signature flair.
Located along Baptist Street, this 100-seat bar is an escape for anyone looking to unwind. Designed to capture the charm of a European neighbourhood bar, Bar Julius is open from morning till late, welcoming visitors for anything from an espresso at dawn to a martini at midday. Leading the charge in the kitchen are Head Chef Will Francis (ex-Cam & Hooper London) and Executive Chef Pip Pratt, who together are redefining all-day dining with innovative dishes that showcase exceptional ingredients.
According to James Bradey, Liquid & Larder’s co-founder and director, the idea for Bar Julius was to draw inspiration from New York’s European-style bistros, where a mix of locals, professionals, and tourists gather throughout the day. “We’re creating a space that’s warm, lively, and full of character, where people can gather and enjoy a vibrant, sophisticated setting,” Bradey explains.
The all-day menu features bistro-style dishes that showcase exceptional ingredients and refined techniques. Freshly shucked oysters are served with a vodka Bloody Mary granita, while crab salad combines salt-baked kohlrabi, clarified cucumber, and chilli oil. Other highlights include crispy lamb belly with yogurt, salsa verde, fennel, and preserved lemon, and the Bar Julius Burger, which some say rivals the famed Gidley Burger. The menu also includes seared bream with fennel, moules marinière, smoked salmon roe, and roast lemon and thyme chicken with frites and tarragon gravy.
The drinks menu, curated by Group Bars Manager Ben Ingall, offers a blend of classic cocktails and creative seasonal options. The crystal mimosa is spritzed tableside for dramatic flair, while the Sticky Date Martini combines vodka, Medjool date, Mr Black coffee liqueur, Single O brew, allspice, and whey. The wine list celebrates the elegance and richness of European varieties, spotlighting sustainable, small-scale producers.
Design is at the heart of the experience at Bar Julius, with local architects SJB creating a warm and inviting atmosphere that combines Australian timbers, marble, and bold patterns. Lead designer Victoria Judge says the space is meant to feel cosy yet vibrant, blending timeless elements with fresh, playful energy. A ceiling mural by Sydney artist Louise Olsen, co-founder of Dinosaur Designs, features “Still Life” elements that add a unique visual flair to the space.
Bar Julius is designed to be a meeting place for any time of day or night, whether catching up over coffee, enjoying a leisurely meal, or transitioning seamlessly from afternoon wines to evening cocktails. With Liquid & Larder’s signature hospitality at every turn, it’s set to be Sydney’s most anticipated new hotel bar experience.
