A Fiery New Cocktail List And All You Can Eat Pizza: Hide Out At Apollonia’s Subterranean Den This Winter

Bars, Drink, Sydney / 3 May 2022

Apollonia’s new libations include an Espresso Martini x Amaretto Sour hybrid that’s sure to tantalise your sweet tooth.

Finally, we’ve abandoned misplaced hopes of an Indian Summer and accepted the cosy, carby fruits of a promisingly bountiful winter. The CBD’s favourite Sicilian bandit’s drinking den has just launched several new cocktails to ease us into the cooler months.

The unique cocktail list is divided into chapters based on Apollonia Vitelli-Corleone (the ill-fated wife of Michael Corleone in The Godfather)’s love story. Here’s what we’re most looking forward to smacking our lips around this winter:

Wedding Cake anyone? Made with rye whiskey, local coffee amaro and amaretto foam, this bewitching little number takes its inspiration from the big ornate wedding cakes served at Italian weddings. Sweet, spicy rye whiskey and rich local Mr Black coffee liqueur is topped with house-made amaretto foam to produce a cocktail which espresso martini or amaretto sour drinkers will enjoy immensely.

Next up, this Chain of Events only has one possible outcome, a rollicking good time. Named for the vengeful chain of events that happened to Apollonia’s assassins, the Chain of Events uses a blue agave tequila with rosolio, chilli liqueur, apple, tarragon & spice, making for a fragrant winter warmer.

Simply put, Old World Ways is a macadamia, choc-orange old fashioned, need we say more? Sweet, yet cold and bracing, Old World Ways will appeal to whisky lovers with a sweet tooth. Made with Brookies Mac. Orange Liqueur, bitter orange, macadamia liqueur, amaro, and chocolate bitters and served with Apollonia’s signature monogrammed ice block.

Also kicking off from Friday 6th May is Apollonia’s All-YOU-CAN-EAT Pizza Sourdough Slice. Every Friday between 12pm-4pm munch your way through as many pizza slices as you can pack in for just $20 per person.
