Bar Clarence, down the stairs and into daiquiri country
Down a flight of stairs at 275 Clarence Street, Bar Clarence is a daiquiri bar in the Sydney CBD from Sam Overton, the operator behind Lucky’s Lounge in Darlinghurst and Frankie Cadillac in Surry Hills. It’s his third venue, a moody black and off white room for just 50 guests.
Overton calls the daiquiri the most honest cocktail there is, with three ingredients and nowhere to hide, and the whole bar is built on that idea. Rum, lime and sugar are shaken hard and served ice cold, then stretched across ten different takes, so there’s plenty to work through. Happy hour runs Tuesday to Friday and covers a Mojito as well as the daiquiri, and hospo workers get happy hour pricing all day, which makes it an easy place to land after a shift. Jaffles and bar snacks keep a quick one from staying quick, and with no bookings, you can just walk in.
