Beloved Woollahra pub launches Subida, a new pintxos and tapas bar – just in time for summer.
Woollahra locals have shown their devotion to The Light Brigade Hotel since it was founded more than 120 years ago. Since then, it has undergone several facelifts, the most recent revamp of its rooftop bar bringing in a hefty crowd during the warmer months. Determined to usurp the traditional ‘beers n’ burgers’ pub ethos, they’ve now launched Subida.
Situated on level one of the hotel, Subida is a new pintxo and tapas bar, serving a modern spin on Spanish cuisine. Evoking a fun, lively and modern dining experience, this new space showcases Spain’s vibrant culture with a focus on fresh, delicious flavours.
On the pintxos menu (meaning Spanish snacks) are items such as pork crackling with whipped sweet corn ($7), Manchego croquettes ($7), and Sydney rock oysters teamed with a sangria granita ($4.5 each).
The tapas menu is divided into three sections: Las Verduras (vegetables), Los Mariscos (seafood) and Carnico (meat). Dishes that we have our eyes on include South Australian octopus a la plancha, served with mojo verde, broad beans and kipfler potatoes and PX glazed beef cheek, served with Jerusalem artichokes and onion rings.
The cocktail list feeds into the fun and frivolity of Spanish culture with concoctions such as a signature margarita, Cava Aperol spritz and of course, you’ll find plenty of sangria. Travelling over to the wine list, it seesaws between Spanish drops and more locally sourced vinos.
When it comes to the design, well-known Sydney based artists Nadia Hernandez and Brett Chan have transformed level one restaurant into a venue reminiscent of a contemporary Spanish street scene. Think bold colours, patterns and wall art murals. Fun fact, the wall art also climbs up the stairwell to reveal the level one restaurant, giving relevance to the name “Subida”, which means to “rise or climb”.
