Mode Kitchen and Bar is the modern Australian restaurant inside the Four Seasons Sydney, led by Chef de Cuisine Nathan Barone, with a focus on provenance, fire-kissed cooking, and ingredients bred, grown, fished, and foraged in Australia. The open kitchen brings drama and personality to every service, and the 200-plus label wine list champions small producers, many available only here or at the cellar door.
Bide's philosophy is ingredient-led and seasonally driven, letting produce do the work with bold simplicity. Dinner opens with The Daily Bread, sourdough from the oven paired with a trio of scented olive oils infused with garlic, basil and zesty lemon. Starters run from wood-roasted Abrolhos Island scallops with herb miso and cultured butter to Wagyu tartare with nashi pear and saltbush.
The Sydney Rock lobster mac and cheese is a must-share dish with a three-cheese sauce, herb crumb, and baked in their wood-fired oven. Mains span wood-fired octopus to large dry-aged cuts designed to share.
Dessert is a must! Executive Pastry Chef Nicolas Blanc's signature dish is a pavlova that changes with the seasons, giving you at least four reasons to visit Mode Kitchen and Bar each year. You can also pre-order whole cakes to go, perfect for a birthday or office celebration.
