Ananas The Rocks, Sydney's beloved French brasserie, is back
Ananas The Rocks is the celebrated French brasserie returned to Argyle Street under Hunter Street Hospitality, led by Executive Chef Mike Flood, formerly of Felix. Same name, same building, same champagne-forward brasserie spirit, but a new experience.
Flood and Head Chef Christian Jones have built a menu rooted in French brasserie tradition. A handful of dishes return from the original 2012 to 2016 run in their exact form: Soupe à l'Oignon, Tartare de Bœuf, Canard Confit and Steak Frites au Poivre.
The Rillettes de Crabe is finished tableside from a bespoke trolley, with handpicked spanner crab and housemade condiments mixed to preference. Escargots take a different turn, baked in red wine and bone marrow butter with an Espelette crumb. The Baba d'Ananas arrives on a purpose-built trolley, a rum-soaked savarin sliced to order with cooked pineapple and a finishing pour of house pineapple rum.
The wine list runs to 700 bins and leans heavily French, with particular depth across Champagne and Burgundy, more than 40 wines by the glass and five Champagnes available at the bar alongside fresh oysters and a short snack menu. The room seats 112 in the main dining room, 24 at the bar and a private dining room for up to 60. The gold pineapple lamps are back. The playlist is back. Ananas is back.
