Sydney Restaurant Group announces the reopening of Summer Salt Restaurant: A new era of coastal dining in Cronulla

Sydney Restaurant Group has reopened Summer Salt Restaurant. The iconic Cronulla dining destination has returned with a bold new design and a contemporary Italian menu, prepared to redefine coastal dining at the stunning Elouera Beach in Cronulla.

Summer Salt has been a cherished Cronulla landmark for years. Its recent transformation by Sydney restaurateur Bill Drakopoulos embraces a blend of simplicity and sophistication, marrying modern minimalism with the timeless charm of its coastal surroundings. Every detail, from the sleek furnishings to the carefully chosen colour palette, ensures that the endless blue horizon remains the focal point, allowing guests to stay connected to the coastal beauty from every seat.

Under the guidance of Head Chef Eddie Yardemian, in collaboration with Group Executive Chef Adam Spencer, Summer Salt’s new menu offers a contemporary Italian experience with a seafood focus that pays tribute to the venue’s waterfront. The menu features signature dishes that are innovative and deeply rooted in Italian tradition. Some highlights include WA octopus brined in a fragrant mix of Vermentino, garlic and citrus, then steamed and chargrilled over coal. It’s accompanied by kipfler potatoes cooked with Sobrassada, a spicy Spanish salami. Imagine a classic Italian seafood dish, but taken to a new level, the Seppia Linguine features Australian seafood with a rich, buttery sauce infused with Cinzano and sea urchin.

Adding a touch of interactive fun, Summer Salt has introduced a roving dessert trolley that features the “Seaside Mess,” inspired by Peach Melba and the Sex On The Beach cocktail. Guests can customize their desserts with a variety of toppings, making for a memorable and playful dining experience. Award-winning Beverage Director Brendon Hill has crafted a drink menu that enhances both casual visits and the experience of enjoying drinks before or after a meal. Complementing the drinks menu is a selection of bar snacks, including favourites like fresh oysters, king prawn croquettes and wagyu beef tartare.

Starting September 13th, Summer Salt will debut Salt Sessions, a weekend event series featuring DJs every Friday from 7-11pm Saturday from 5-11pm, and Sunday from 2-5pm. These sessions will turn the bar into a vibrant hub of music and coastal cocktails, providing guests with the perfect setting to relax and enjoy the lively atmosphere that Summer Salt is famous for.
