Tucked behind the Art Deco walls of Kimpton Margot Sydney lies The Vault, an eight-square-metre pop-up bar concealed within the hotel’s original 1930s strongroom.
From June 12th to July 31st, this hidden speakeasy will host intimate whisky tastings for just six guests at a time, offering a rare and richly layered experience beneath the city’s surface.
Curated in partnership with boutique Tasmanian distillery Lark and renowned chef Luke Mangan of Luke’s Kitchen, the experience is built around four carefully selected drams (including the sought-after Dark Lark single malt), each paired with seasonal canapés. The setting? Moody lighting, a whisky barrel table, and heritage shelving lined with bottles, a striking blend of luxury and secrecy. Perfect for winter sipping.
What to Eat: Seasonal canapés from Luke Mangan, tailored to each whisky, think smoked trout, caramelised onion tartlets, and fig-spiced bites.
What to Drink: Lark’s Dark Lark single malt whisky, or go luxe with the Mizunara Rare Oak Cask.
When to Go: Cold winter nights, ideal for date night or catching up with a mate.
