After a hard days work there is nothing more satisfying than putting your feet up and ordering a stiff drink. Brothers Joe and Nick van der Heide, with friend and business partner Byron Dunn, know a hard days work and make a decent stiff drink. They’re the owners of a new Potts Point bar called Parson’s Bar, a place the boys have built with their bare hands.
The 20’s-40’s themed bar pays homage to the working class Australian, who put in the hard yakka to earn themselves a drink at the end of the day. Parson’s has celebrated their opening last week with delicious cocktails like, The Parson’s Mistress and Blood and Sand.

The trio have built the bar from scratch, using local, repurposed wood to create a home-style experience for Potts Point regulars to enjoy.
For the bar top, the Brothers sorted through the Rozelle Timber yard to find 3 lengths of 80 year old Spotted Gum Australian hardwood. The Bar front is made from Cyprus wood sourced in Milperra. The boys also built the banquettes at the front, the planter boxes, the seats out the back, upholstered the seats and the deck. We’re getting thirsty just thinking about it!
To their credit, the bar takes you to another time without overwhelming you with stories of the harder days in the Depression.

You’ll find Joe, Nick and Byron at the bar each night working front of house and cooking tasty snacks like pork crackling, pulled beef brisket sliders and crispy whitebait.
Parson’s is a new bar with hopefully a long history to come. Thankfully for you, most of the handy work has already been done so you can just sit back and enjoy that stiff drink labour free.
