If we had to pick our favourite summer drink, a spritz would be close to the top of our list. It’s the kind of beverage that screams long balmy nights and carefree summer afternoons spent lapping up the sun. And this spring, we’ve found the perfect spot to find a well-made spritz served with a side of water views.

In collaboration with Bombay Sapphire, Opera Bar In Bloom presents an exclusive menu of summer-inspired refreshing drinks and desserts. And this line-up is worth flocking to the Harbour foreshore. To celebrate the warmer months and longer nights, Opera Bar is serving up a mouth-watering menu of floral spritz cocktails made to be snapped, shared and sipped (of course). The best bit? You’ll be able to sample this limited edition menu 7 days a week until the event wraps up on November 3rd.

So, what’s can you expect to try from this exclusive menu? For lovers of a well-made spritz, you’ll be spoilt for choice. Start with a Cherry Blossom Crush (featuring a splash of Bombay Sapphire, grapefruit and citrus bitters) before trying a Don’t Be Chai cocktail (a tropical-inspired blend of Bombay Sapphire, rainbow chai, hibiscus, ginger, and lime). With 5 exclusive spritzes on offer, it’s a good thing Opera Bar will be serving these drinks all day every day throughout the month.

Fancy something to really refresh your palette? Get your hands on one of Opera Bar’s Bombay-infused sorbet soft serves. Take your pick from their two exclusive flavours (each containing one standard drink), including the Gin & Tonic or Aviation blends. Once you’ve worked up an appetite, let Executive Chef Laura Baratto work her magic with a menu of all-day bites including Sydney rock oysters, tiger prawns, crispy chicken with jalapeño mayo and lime or a selection of pizzas. To set the mood, enjoy live music every evening at sunset showcasing a rotating selection of local and international acts.
