Apothecary was the historical name given to medical professionals who formulated and dispensed remedies. This is a role now served by pharmacists and one suave bartender known as Dr Phil. Those clever drinks wizards behind Eau De Vie and Roosevelt have opened a new small bar called Apothecary situated at the entrance of Eau De Vie, Darlinghurst.
The 30 seater space opened briefly as a meatball and bloody Mary bar called Bottleneck and is now home to the new drink experience designed and delivered by Phil (The Doctor) Gandevia. Think degustation style dining but for cocktails.
The cocktail menu changes monthly and is broken up into four sections: ‘Down the Garden Path’, ‘What the Doctor Ordered’, ‘His and Hers’ and ‘Eau de Vie 3 Way’. Drinks can be ordered al a cart but it’s much more fun picking one of the sections and enjoying a degustation of three cocktails.
Some of our favourites from ‘Down The Garden Path’ include the Beet Drop – Fig infused port, beetroot, tarragon, egg and chocolate and the What’s Up Doc made with tequila, carrot, ginger and citrus.
At the moment the Eau de Vie 3 Way is celebrating Bacon week with a special ‘Bacon 3 Way’ menu including the BLT – Vodka, tomato consume and vermouth complete with a witlof, cheese and bacon garnish and the must-try Big Kahuna made with house made bacon bourbon, cognac, pineapple, pomegranate, sirracha and black pepper smoke.
From the ‘What The Doctor Ordered‘ menu the favourites include the Hot Retort– butter-scotched scotch, persimmon, pear, citrus, spiced agave, dandelion and burdock chocolate. Not only is it a perfect winter concoction but it takes bartender theatricals to a whole new level resembling a science lab experiment.
Bookings are recommended and can be made for 6.30pm, 8.30pm and 10.30pm. You can also order food from next door at Eau de Vie. Degustations start at $60/person and include courses (cocktails).
