The Goodies Hospitality group launches its new Goodies & Friends series on Tuesday, 15 September, handing the Bessie’s kitchen to three-hatted Brae chef Dan Hunter for one night only. The group behind Bar Copains, Alma’s and host-restaurant Bessie’s are bringing the talented chef up from his rural outpost in Birregurra, Victoria for the event.
Hunter’s seasonal, provenance and produce-driven approach shapes a bespoke five-course menu spanning small plates to family-style mains, including sea urchin and chickpea crisp with serrano honey, yellowfin tuna and eggplant braised with chocolate and white miso, duck liver cream with pistachio and pork blood biscuit, and beef short rib glazed with smoked eel. Drinks are available on consumption. Seats are capped at 70.
