The world’s joint No. 1 restaurant is coming to Sydney.
SingleThread, the three Michelin-starred Californian destination recently crowned by French restaurant bible La Liste, will take over Bathers’ Pavilion for an exclusive four-week residency from 28th July to 23rd August 2026.
Led by husband and wife team Chef Kyle Connaughton and Head Farmer Katina Connaughton, SingleThread has become a benchmark for modern gastronomy, weaving hyper-seasonal produce from their 24-acre Sonoma farm with Japanese kaiseki philosophy. Kyle’s background includes time as Head Chef of R&D at The Fat Duck and years cooking in traditional Japanese kaiseki restaurants.
The 10-course tasting menu opens with their signature Hassun, a kaiseki-inspired seasonal introduction featuring up to 10 delicately composed bites, often harvested that morning and presented on an elaborate bed of florals. Executive Chef Aaron Ward has already begun growing vegetables and botanicals at Bathers’ Pavilion’s Southern Highlands farm specifically for the collaboration.
Priced at $690 per guest for lunch and dinner Tuesday to Sunday. Bookings open 12th March 2026 at 10am via Bathers’ Pavilion.
