The Northern Beaches’ favourite sandwich slinger is back – for good this time!
After a wildly successful pop-up run, Tommy Panini is making its permanent return to Brookvale from February 18, 2025. If you missed out on their Italian-style panuzzo sandwiches the first time, now’s your chance to get your hands on these cheesy, toasty, wood-fired delights.
Founded by celebrity private chef Tom Morrison, Tommy Panini started as a passion project and quickly became a must-visit lunch spot. “When we first opened, we were selling around 30-40 sandwiches a day,” Morrison shares. “Before we closed at the end of last year, we were regularly hitting 300+ sandwiches daily! The community’s response was incredible, and we knew we had to come back permanently.”
Tommy Panini’s signature panuzzo sandwiches – a hybrid of pizza and panini – are built on wood-fired rosemary and garlic-infused dough and stuffed with premium Italian ingredients. Fan-favourite classics are making a comeback, including:
Chicken Cotoletta – Calabrian chilli mayo, sun-dried tomato tapenade, zucchini pickle, shaved parmigiano, and rocket.
Mortadella Panini – The ultimate Italian staple, stacked with silky mortadella and creamy stracciatella.
And for those craving something new, there’s a spicy twist on the OG:
Chicken Cotoletta 2.0 – Featuring spicy vodka sauce, Vanella buffalo mozzarella, and house-made pesto.
Tommy Panini’s secret? Everything is made in-house – from the spreads and sauces to the pickles and marinades. “We’re not just making sandwiches; we’re creating a full culinary experience,” says Morrison. “We take traditional Italian flavours and give them a modern, indulgent spin.”
