After over a decade as a beloved Manly institution, The Pantry Manly has embarked on a mouthwatering new chapter, welcoming a talented new Head Chef, Francesco Armillis, formerly of the acclaimed Popolo. Armillis brings a wealth of culinary experience and fresh perspective, curating a brand-new menu for The Pantry. Showcasing the best of local ingredients, the menu centres around traditional Italian dishes with an Australian twist — expect share plates, show-stopping mains and dry-aged meats.
Having worked throughout the best restaurants in Italy and Europe, Armillis is now bringing his wealth of experience and expertise to The Pantry Manly. Championing the best of local produce, The Pantry Manly is collaborating with local baker, Northern Beaches bakers, for all their bread. Their beef, lamb, and chicken all come from within NSW, ensuring the highest quality and freshest flavour. To raise the bar even higher, the restaurant also has its own in-house dry-aging program for its meats, giving them that extra depth of flavour.
On the menu, you’ll find the best of fresh seasonal produce. Start your meal with marinated sardines with zucchini, mint, and semi-dried tomatoes or dry-aged wagyu bresaola carpaccio with petite bouche, figs, and aged pecorino. For mains, highlights include prawn pillows, reminiscent of the vibrant street food from the Amalfi Coast, and a saucy house-made squid ink linguine. For meat lovers, a lamb back strap with orange mint salsa, roasted capsicum, and shaved almonds. A must-order for dessert is The Pantry’s signature chocolate-covered cannolo filled with a luscious yoghurt mousse and served with both a pistachio and a strawberry coulis. Enjoy this the traditional Italian way — no utensils, only hands.
The cocktail list at The Pantry is a celebration of its idyllic waterfront setting. One signature highlight is “Mojito on the Beach”, infusing the traditional rum, lime, and mint base with the sweetness of passion fruit, inspired by the sun-drenched shores of nearby beaches. Another standout is “Shelly Spritz,” named after the iconic Shelly Beach, topped with a garnish of fresh seasonal berries.
