London’s Cult Favourite The Palomar Arrives Down Under Helmed by Mitch Orr

Eat / 9 October 2025

The Palomar brings a blend of Southern European, North African and Levantine flavours to Paddington.

The acclaimed London-born restaurant is the brainchild of Studio Paskin, the sibling duo Zoë and Layo Paskin behind Evelyn’s Table, The Barbary and The Blue Posts, with Sydney’s own Mitch Orr at the helm as Culinary Director.

Marking Studio Paskin’s first foray into Australia, The Palomar will anchor the brand-new 25hours Hotel The Olympia at 1 Oxford Street, where it sits alongside The Mulwray, a sophisticated wine bar, and Jacob The Angel, a specialty coffee and all-day café. Together, the trio of venues creates an all-day dining hub in the heart of Paddington, from morning brews to late-night feasts, all under one roof.
