There seems to be no end to Sydney’s obsession with oh-so-grammable dining spots. Kickstarted by Sydney’s favourite The Grounds of Alexandria, cafes and eateries have been popping up across the city in recent years with menus and fit-outs that command social attention. From elaborate smoothies to eye-catching desserts and extravagant interiors, standing out in Sydney’s brunch scene has never been more competitive.

But there’s one new contender that serious brunch-goers are going to be flocking to this spring. Meet Saint Aubaine, the new tropical rainforest cafe that’s opened its doors in the heart of Pyrmont. Situated just a quick stroll from Central Station and Ultimo Tafe, this newly launched eatery is a welcome dose of living colour in the thick of our concrete jungle.

The space has been custom designed by interiors expert Anna Wang, featuring an explosion of blossoming colour. Think a vibrant floral wall, hanging plants, leafy palms, a garden ceiling and rainforest vibes at every turn. Plus, the garden-esque outdoor dining space will give the diners the impression they’re not in Sydney anymore.

As for the menu, Saint Aubaine’s offering lives up to the cafes’ Instagrammable aesthetic. Serving up a succinct selection of 8 brunch dishes, each comes ready to be snapped and shared by diners. Expect modern Australian eats with a pop of colour on every plate. Signature dishes include their vivid red ruby breakfast panna cotta served with berry mascarpone, chocolate crumble, seasonal berries, popping candy and rose syrup. Talk about a dream brekkie.

Plus, you’ll also find their Scallop Benedict on the menu, which seriously steps up the typical breakfast game. Expect a soft white bun filled with slow-cooked scallops, semi sundried tomatoes, hollandaise sauce, burnt avocado puree, seasonal herbs, and poached eggs. Yes please.

To finish off the experience, you’ll find colour-popping candy flavourite signature lattes in flavours such as red velvet, bubble gum and taro on the drinks menu. And coffee lovers can sip to their heart’s content on brews from The Grounds.
