Eat / 13 October 2025

Sydney’s most iconic food institution has officially entered a new era.

The new Sydney Fish Market has opened its doors unveiling a spectacular, purpose-built harbourside destination at Blackwattle Bay. As the largest fish market in the Southern Hemisphere, the long-awaited redevelopment reimagines Australia’s seafood capital as a world-class hub for dining, retail, culture and communitym all under one roof.

Set across more than 26,000 square metres, the new market brings together 42 retailers and 19 seafood wholesalers, combining the buzz of a working fish market with an immersive public experience. Early this morning, the precinct came to life with its first live auction at 4am, marking the milestone with a charity seafood auction celebrating NSW produce.

Beyond the auctions, the space has been designed to invite visitors deeper into the story of seafood. From watching daily operations unfold to tasting your way through global cuisines, the market balances authenticity with scale. Expect everything from fresh fishmongers and takeaway classics to sit-down dining, baked goods, gelato and Australia’s first dedicated olive oil concept store, alongside behind-the-scenes tours and masterclasses at Sydney Seafood School.
