Sunday Co., the team behind Morrison’s Oyster Bar and Whalebridge, is bringing the grandeur of mid-century New York to Sydney with Vito’s, opening August 2026 in the heritage-listed Burns Philp Building.
This is Italian-American dining at its most ambitious, a 170-seat dining room with 21-foot ceilings, polished marble bars, burgundy leather banquettes, and brass detailing that feels like it’s been part of Sydney for decades.
Leading the kitchen is head chef Michael Fox, former Good Food Guide Young Chef of the Year and chef de cuisine at Carbone, Hong Kong. Expect bold, generous Italian-American classics executed with precision. The orecchiette with crab and green garlic butter is a standout, alongside prawn and scallop agnolotti, scampi crudo, and Black Onyx porterhouse steaks cooked over a custom grill.
Designed by Craig Madgwick, the space blends nostalgic charm with lived-in luxury, featuring custom elements crafted by Australian artisans. Open midday until late, seven days a week.
