The team behind Moku has launched Linla, a Taiwanese social dining bar in the former Dead Ringer space.
Founded by restaurateur and mixologist Charles Chang, the venue is built around a simple ritual: raising a glass together.
In Taiwanese dialect, “Linla” captures that celebratory sound and feeling shared between friends.
Head Chef Montien Thipwongsa delivers a playful pan-Asian share menu with Thai influences. The standout? Night-Market Crispy Chicken with Szechuan seasoning, garlic chips, and basil, served with a paper bag so you can shake up your own flavour level. Other highlights include Cha-Cha-Cha Half Chicken with corn ribs and fermented chilli oil, plus Wagyu Beef Tartare with scallion pancake.
Chang’s cocktail program features easy-drinking serves with technical depth, while sparkling teas have emerged as a signature, designed to balance the menu’s spice and richness. The space blends soft ivory walls, walnut timber, and orange-brown leather banquettes for a warm, inviting vibe.
Find Linla at 413 Bourke Street, Surry Hills, open Tuesday to Saturday from 5:30pm to 1am.
