Owner Of Blackwood Set To Launch Mediterranean-Inspired Dining Concept, Sana

A dynamic new player is set to shake up Sydney’s fast-casual dining scene. Sana is the Mediterranean-inspired eatery opening in South Eveleigh next February.

Sana is the brainchild of Daniel Sorridimi (Blackwood Bondi & Cronulla) and acclaimed chef Joel Bennetts (Fish Shop, Burger Park). It’s set to deliver a new benchmark for health-conscious dining. Expect signature bowls, protein plates, and Mediterranean-inspired rolls.

Taking its name from the Spanish word for “wellbeing,” Sana redefines fast-casual dining with a focus on premium produce, balanced flavours, and traditional Mediterranean cuisine. Chef Bennetts, drawing from 16 years of international culinary experience, has created a menu that brings a refined edge to quick meals. 

Menu highlights include The Sana Bowl, featuring lamb mince, pickled zucchini, cucumber, jalapeños, coriander, and spiced almonds, layered over a choice of bases such as Mediterranean basmati rice, cauliflower rice, or lettuce. Another standout is the Red Harissa Protein Plate, a tantalising mix of poached chicken, house slaw, spiced almonds, and house-made pickles.

“After years in the making, Sana is finally here to offer a dining experience where nutrition and taste go hand-in-hand,” says Sorridimi. “Mediterranean cuisine brings a fresh perspective to fast-casual dining, and Joel’s menu perfectly captures that balance.”

Bennetts adds, “The menu is a culmination of my personal travels and family traditions, from a Japanese-inspired zucchini pickle to my family’s Christmas lamb recipe. Each dish has been designed to not only taste amazing but to leave you feeling good.”
