Sana, a vibrant Mediterranean-inspired fast-casual dining destination, opens its doors in South Eveleigh.

The brainchild of Daniel Sorridimi (Blackwood Bondi & Cronulla) and acclaimed chef Joel Bennetts (Fish Shop, Burger Park), Sana redefines fast-casual dining by blending nutrition, flavour, and premium ingredients into every dish.

Inspired by the sun-soaked shores of the Mediterranean and Middle East, Sana’s menu features signature bowls, protein plates, and Sana rolls, all crafted with house-made ingredients like pickled zucchini and slow-cooked lamb shoulder. Highlights include the hearty Lamb Shoulder Bowl with confit garlic lamb and green herb salsa, and the Poached Chicken Roll with black pepper mayo and Calabrian chili oil. Customers can also enjoy customisable options and refreshing probiotic sodas in flavors like blackcurrant and mango passionfruit.

Taking its name from the Spanish word for “wellbeing,” Sana redefines fast-casual dining with a focus on premium produce, balanced flavours, and traditional Mediterranean cuisine. Chef Bennetts, drawing from 16 years of international culinary experience, has created a menu that brings a refined edge to quick meals. 

Menu highlights include The Sana Bowl, featuring lamb mince, pickled zucchini, cucumber, jalapeños, coriander, and spiced almonds, layered over a choice of bases such as Mediterranean basmati rice, cauliflower rice, or lettuce. Another standout is the Red Harissa Protein Plate, a tantalising mix of poached chicken, house slaw, spiced almonds, and house-made pickles.

“After years in the making, Sana is finally here to offer a dining experience where nutrition and taste go hand-in-hand,” says Sorridimi. “Mediterranean cuisine brings a fresh perspective to fast-casual dining, and Joel’s menu perfectly captures that balance.”

Bennetts adds, “The menu is a culmination of my personal travels and family traditions, from a Japanese-inspired zucchini pickle to my family’s Christmas lamb recipe. Each dish has been designed to not only taste amazing but to leave you feeling good.”
