If you’ve ever dreamed of a pasta dish flambéed tableside in a wheel of $2000 Parmigiano-Reggiano, this is your moment.

The owners of Surry Hills favourite Mille Vini are bringing a fresh spark to the CBD with Rovollo — an intimate, theatrical and utterly immersive Italian dining experience opening this July at 25 Martin Place.

With just 40 seats inside and another 30 alfresco, Rovollo is designed for those who crave personalised hospitality with a side of spectacle. Think pasta carts wheeling through the room, wines poured with ceremony, and dishes plated before your eyes — all within an elegant space fitted out with a marble chef’s table, rich textures, and a glowing open kitchen as the centrepiece.

Helmed by the family-run Esper Group, Rovollo takes over the former L’uva Pasta Wine Bar location and aims to deliver what founder Andrew Wallace calls a “360-degree dining experience.”

“Going out for dinner shouldn’t feel like a transaction,” says Wallace. “It should be immersive, emotional — a moment you carry with you.”

That sentiment was born from a recent family trip to the Amalfi Coast, where meals felt more like theatre than a meal on a clock. “There was a rhythm, a connection, a sense of being known,” he explains. “We want Rovollo to feel like that — a place where you’re part of something.”

On the pass is Executive Chef Cami Feliciano (ex-Seta, Woodcut, Matteo Downtown), who’s creating a daily rotating pasta menu made in-house, alongside large-format proteins and refined antipasti. Joining her is Zane Buchanan (Clam Bar) as Head Chef, set to drive the protein side of the menu with premium seafood and bold, share-style dishes.

The signature? Pasta flambéed inside a 40kg imported Parmigiano-Reggiano wheel, served hot off a roving cart with fire, flair and finesse.

Drinks will be just as considered, with over 250 wines on offer and at least 25 by the glass — thanks to Coravin technology. Expect curated pairings, regular tastings and a list that leans classic Italian with a modern twist.

Rovollo will open for lunch and dinner six days a week, joining high-end neighbours AALIA and The International in one of Sydney’s most dynamic precincts. It’s set to bring heart, heat and high-end hospitality back to the CBD — with a pasta wheel in tow.
