W Sydney and Perrier are shaking things up this Sydney Bar Week with REFRESH, a four-night series of Japanese-inspired cocktails from one of Asia’s best bars.
From 11th–14th September, Head Mixologist Stefano Bussi (The Aubrey, Mandarin Oriental Hong Kong) takes over Living Room and Level 30. Expect omakase-style pairings, Perrier-powered highballs, and a one-night-only guest shift 30 floors above Darling Harbour.
The Omakase Cocktail Experience
On Thursday 11th September, the Living Room turns into an intimate omakase bar with Stefano Bussi (The Aubrey, Hong Kong) at the helm. Expect four Japanese-inspired cocktails paired with curated bites by ex-Saké chef Jamie Cho — plus a welcome drink, sweet finish, and DJ soundtrack. Just 12 seats per session. $99pp.
The Aubrey x Level 30 Guest Shift
Then on Friday 12th September, Stefano takes over Level 30 for one night only. This exclusive guest shift offers rare access to his signature “Shibumi” cocktail collection, think effortless elegance, bold flavours, and sweeping views from 30 floors up. Only 25 guests.
