Get It While It’s Hot: A Limited Time Tropi-Cool Pop Up Bar Is Opening In Bondi This Summer

Rancho Seltzo will spill all over the ex-Pacific Club space as part of an unmissable hospitality collab.

Bondi Brewing Co.and House Made Hospitality (Grana, Apollonia, Bar Mammoni) have joined forces to bring beach-goers a one-of-a-kind resort-style tropical oasis this summer, featuring boozy slushies, Sydney’s best selection of seltzers and our favourite agave spirits. 

Guests will be able to cool off with one of five fun-themed blended cocktails including; the Iced Tropical Whip – a grown-up version of the iconic Disneyland dessert made with white rum, macadamia, pineapple, banana, and coconut cream; and the Frozen Paloma featuring blanco tequila, fresh grapefruit, pimento, vanilla, and a salt rim. 

If a frozen cocktail doesn’t put you on a tropical vibe, perhaps the fresh flavours of Bondi Brewing Co’s hard seltzers will get you back on track. Swig on Mango or Watermelon & Rosewater flavour, and for guaranteed tropi-cool flavour, add a scoop of Rancho Seltzo’s signature coconut ice cream for a spider sensation.

A capacity of 100 is split across 70 inside and 30 outside, further divvied between window nooks, outdoor seating and cosy booths. Bespoke artwork from celebrated local North Bondi artist Jakey Pedro gives the space a Palm Springs-inspired edge with eight artworks reinvigorating the former Pacific site with the classic Slim Aaron turquoise and pink hues and splashes of washed-out fluorescents through illustrations of surfing cowboys, ranch hands and palm trees.

On the menu, expect Baja California flavours with a honed Mediterranean influence that House Made Hospitality do so well. Think kingfish ceviche with coconut, grapefruit and jalapeno, plus a shared flatbread menu featuring housemade bread cooked over the woodfire grill, each platter served with kale tabbouleh, tomato, cucumber, pickled carrots, lettuce and peppers. Choices of filling include; Crispy flathead with spicy cabbage, coriander, garlic, lemon; and a summery Charred lamb shoulder with spiced yoghurt and green salsa.

The venue is the first for Bondi Brewing Co. who have seized the opportunity to showcase their growing seltzer selection. Rancho Seltzo will operate as a pop-up throughout summer and autumn before a decision is made on whether to continue with the concept as a permanent offering.
