Sydney’s omakase scene has a new must-visit destination.
R by Raita Noda has officially opened in Redfern’s Wunderlich Lane, offering an intimate 15-seat dining experience where every guest has a front-row seat to the artistry of Japanese cuisine.
Chef Raita Noda, known for his boundary-pushing approach to omakase, brings his signature flair to this immersive three-hour degustation. With no set menu, each evening’s selection is curated in real time, tailored to the diners and the season’s finest produce. One standout is the Stairway to Heaven, a tiered sashimi showcase featuring aged Bass groper with radish sprouts, Tasmanian sea urchin with cuttlefish ravioli, and three cuts of aged wild bluefin tuna – from akami to the rich, buttery otoro.
“Creating an unforgettable experience for every guest is at the heart of what we do,” says Noda. “It’s fine dining, but the atmosphere remains warm and engaging. Guests are part of the performance, much like watching a live jazz session – dynamic, elegant, and full of soul.”
The venue itself is as much a work of art as the food. Designed by acclaimed architect Koichi Takada, the space evokes a rain-soaked Tokyo night, with a liquid prism ceiling casting rippling reflections, pendant lighting mimicking suspended droplets, and 2,000 shimmering chains cascading like a delicate rain shower across the windows.
Building upon the success of his eight-seat Raita Noda Chef’s Kitchen in Surry Hills, Noda’s latest venture elevates the omakase experience to new heights. Currently open for a single nightly seating, R by Raita Noda will introduce a lunch service in the coming weeks.
