Stefano Manfredi is bringing yet another piece of Italy to Sydney next month with the opening of his new restaurant, Pizzaperta at The Star Casino. The restaurant will follow authentic Italian pizza making methods using artisan and unrefined stoneground Molino Quaglia ‘Petra’ flours imported from Italy. Manfredi will also use a type of fermentation process that makes the dough easier to digest.
Being on the waterfront entrance, the pizzeria will also include a bar perfect for lunch or dinner. Manfredi has collaborated with Head Chef Gianluca Donzelli who shares his hometown traditions and experiences to create a classic Italian menu. This includes margherita, marinara and hot calabrese by using the best local and imported ingredients such as mozzarella fior di latte and bufala, and traditional ‘Nduja. Of course, extra virgin olive oil will be used exclusively for all preparations and salads, salumi and desserts will also be featured on the menu.
