Whisky, storytelling, and a four-course feast take centre stage in Haymarket this October.

Meet the Makers is back at Thomas St Kitchen & Bar for its second instalment, following the sold-out success of August’s launch. On Friday, the 10th of October, Sydney Central Hotel will host an immersive whisky cocktail dinner in collaboration with the award-winning Manly Spirits Co., blending craftsmanship, storytelling, and flavour in one unforgettable evening.

Hosting the night is Manly Spirits Co. Distillery Manager and Master Blender, Dave Richards. Known for whiskies that balance coastal character with classic technique, Dave will share rare insights into cask ageing, blending, and the inspiration behind each bespoke cocktail pairing. From the crisp brightness of a Yuzu Whisky Highball to the smoky depth of a Rob Roy, diners will be taken on a sensory journey through the heart of whisky-making.

In the kitchen, Executive Chef Aman Prasad has crafted a four-course menu that moves seamlessly from delicate and fresh to rich and robust, designed to showcase whisky’s versatility at the table. Expect seared tuna tataki with a citrusy highball, slow-cooked pork belly paired with a Maple Old Fashioned, and a chilli chocolate fondant matched with a warming Port Cask Whisky to finish.
