Sydney’s fine dining scene is about to hit fever pitch.
L’Enclume, the three-Michelin-starred, world-renowned restaurant, is making a triumphant return to Bathers’ Pavilion for a six-week residency. Bookings have officially opened and we expect them to sell out quick!
Headed by legendary Simon Rogan MBE, whose Simon Rogan Group now holds an eye-watering nine Michelin Stars, L’Enclume first made waves in Sydney in 2023 with a sold-out pop-up that redefined what a restaurant residency could be. The demand? Insatiable. The waiting list? Over 2,000 tables long. The execution? Flawless. And now, Rogan is back to raise the bar even higher.
From 16th July to 24th August, the Balmoral Beach institution will transform into an outpost of Rogan’s Cumbrian masterpiece, delivering a 14-course tasting menu that promises to be even more ambitious than before. Expect a meticulous exploration of flavour, technique, and ingredient perfection, all rooted in Rogan’s farm-to-table ethos. He’s been busy forging relationships with Australia’s top growers, and this time, the menu will showcase marron, snow crab, the country’s best beef, and native ingredients like quandong and wattle.
The attention to detail? Next level. We’re talking custom crockery, hand-forged cutlery, bespoke art installations, tailored uniforms, and an elite brigade of 15 UK-based chefs and front-of-house pros making the trip Down Under. Rogan himself will be on the pass for every single service—a rare chance to experience one of the world’s greatest chefs in action without the long-haul flight to England. Joining him? Heavyweights like Oli Marlow (Roganic Hong Kong, Aulis London, ION Harbour Malta), Valentin Mouillard (Michelin Sommelier of the Year), and Sam Ward, Managing Director of Simon Rogan Restaurants worldwide.
“Our first residency at Bathers’ was about bringing L’Enclume to Sydney,” says Rogan. “Now, we’re flipping the approach—if L’Enclume had started in Sydney, this is what it would look like.”
And let’s not forget the wine. With four carefully curated wine pairings ranging from $230 to an ultra-luxe $1,200 per person, plus a non-alcoholic pairing for $120, every sip will be as considered as each bite. There’s even an exclusive cellar list, allowing diners to pre-arrange rare vintages ahead of their booking.
