Internationally renowned L’Enclume will move into Balmoral Beach’s iconic Bathers’ Pavilion for a five-week residency kicking off July 19th.
Abandoning a questionable Northern English summer, for a beachside stint during Sydney winter, acclaimed chef Simon Rogan will be bringing the UK’s best restaurant down under.
Having recently marked its 20th anniversary and collecting a highly coveted third Michelin star in the process, L’Enclume is ready to celebrate and what better backdrop than the sunny shoreline of Balmoral Beach!?
With the Balmoral takeover being years in the works, Chef Rogan has had plenty of time to work on a comprehensive list of New South Wales and Australian producers, narrowing it down to an elite shortlist who match his commitment to the highest calibre of ingredients. Produce will be grown specifically for the residency to ensure a truly traceable menu that reflects Chef Rogan’s farm-to-table philosophy. Those lucky enough to snag a seat during the limited-time residency will enjoy some of L’Enclume’s most renowned dishes, adapted to incorporate local and native ingredients from some of Sydney’s best local farms and fisheries.
The 8-course menu, complete with snacks and petit fours, will centre around small, precise and complex dishes which give prominence to the concept of the ‘perfect ingredient’ – a philosophy at the centre of everything Rogan strives to achieve based on the notion that it is only through growing the perfect vegetable, herb or fruit, that one can create the perfect dish.
Along with exceptional ingredients, Rogan’s world-class sommelier team will develop a comprehensive wine list to match, with the option of exclusive rare vintages at an additional $190, $290, and $750 pp.
