What could be more comforting then a slice of cake? Not much. Those who love to bake will tell you it’s a kind of money-can’t-buy therapy. The cracking of fresh eggs into a bowl, the whisking of sugar. Let’s not forget the whipping of butter (lots of it) teamed with the soft folding of flour. One woman who knows a thing or two about baking is Jillian Butler. Previously working in insurance, Jillian decided to quit her corporate job and follow her passion for cakes. With classical training at Le Cordon Bleu culinary school, Jillian’s Cakery was born back in 2014.
Situated on Reservoir Street in Surry Hills, this cake shop encapsulates all that is good and wholesome about the art of baking. In each and every one of Jillian’s creations, you’ll find no artificial colours or additives. Nor any pre-mixes or chemicals. These are the type of cakes that catapult you straight back to your childhood. To a time before the notions of gluten-free, sugar-free and fun free.
On the menu are devilishly decadent delights like key lime pie, vanilla buttercream cake, pumpkin pie, chocolate fudge brownies and red velvet cake. Are you salivating yet? There’s also a very popular dulche de leche cake, accompanied by cinnamon buns and sticky date cakes. Each creation is in part influenced by Jillian’s time spent in the Deep South. It was in Dallas that she worked as a pastry chef, before moving out to Australia. A hefty dose of Southern hospitality permeates throughout, evidenced in the friendly counter service and unpretentious food and drink offerings.
