Sydney’s hospitality landscape has welcomed a major new addition with the launch of Hay St Market at Paddy’s.

This new market precinct in Haymarket brings together a diverse mix of food vendors, specialty traders, and fresh produce sellers, offering a dynamic space for dining, shopping, and socialising.

Located in Market City and Spanning 3,000 square metres, Hay St Market features over 48 traders. The market operates throughout the day, catering to morning coffee crowds, lunchtime visitors, and evening diners looking for casual yet high-quality options. It combines fresh produce, takeaway meals, dine-in options, and licensed bars in one accessible location.

Luke Nguyen, a celebrated chef and TV presenter, has launched multiple outlets, including Pho Chu Lap, featuring his father’s 24-hour pho broth, and Luke Luk Dumplings, known for bold flavours such as Singapore Chilli Crab and Laksa dumplings. Madam Banh Mi, another of his ventures, serves a modern take on the Vietnamese sandwich, including a wagyu beef brisket baguette with fresh salsa.

Australian Indigenous chef Mark Olive has introduced Little Midden, a seafood-focused eatery incorporating native Australian ingredients. Dishes include Smoked Blue Gum Barramundi and Bell Pepper skewers, seasoned with Salt Bush and Pepper Berry.

The market showcases a broad selection of global cuisines. Nico’s Cypriot Chargrill serves traditional Sheftalies (Cypriot sausages), while The Pie Guy by Broomfields offers an 11-hour smoked BBQ beef brisket pie. The Fish Co. features a dedicated sushi and sashimi bar, an oyster station, and live seafood filleting. Taco Nixtamal specialises in authentic tacos made using the traditional nixtamal technique.

For dessert and coffee, visitors can try cannoli piped to order at Biaggio Coffee and Cannoli, pastries from Thomas Hay Bakery, or fresh, seasonal salads at The Health Lab. Beverages are available from Cans & Crates and Traders Bar, which stock over 180 canned drinks from global brands, alongside a selection of cocktails, craft beers, and regional wines.

Hay St Market is not just a dining destination; it also features a selection of specialty traders. Shoppers can find fresh flowers at Flowers by Agnes Harrington, homewares and crockery at The Goods, and sustainable urban farming solutions at Urban Farm by Greenspace.
