Sydneysiders are no stranger to a well-made drink. Across the city, new bars and beverage experiences are popping up and enticing the palettes of drinkers. From botanical-driven bars like Chippendale’s Gin Lane to Manly’s whiskey-focused underground watering hole The Cumberland, we’ve never had a better selection of spirits and cocktails to choose from. And now, a classic Italian spirit is entering Sydney’s drinking scene with a bold new bar concept.

Nestled in the heart of William Street in Woolloomooloo is Vizio Caffe e Cucina. The Italian wine bar and restaurant has been bringing a taste of Tuscany to the streets of Sydney with an all-day menu offering stretching from breakfast right through to dinner and drinks. This summer, Vizio is launching an exciting new bar designed to bring this undiscovered Italian spirit to Sydney’s attention. For Vizio’s owner and general manager Matia Zoffoli, the grappa bar was born out of a desire to educate Sydneysiders about why grappa is the perfect addition to any summer spritz.

Vizio’s Grappa Bar, now a permanent fixture at the venue, hopes to showcase the best of this unrated spirit. For those who’ve never tasted this classic, grappa is a by-product of wine traditionally referred to as pomace brandy. In a nutshell, the spirit is made when the juice has been extracted from juice used in winemaking and the leftovers (known as pomace) are distilled. On the menu at Vizio, you’ll find a considered selection of 90 of the best grappas from boutique distilleries across Italy plus a range of artisan Grappa-infused cocktails. For first-time drinkers, the menu is categorised by region, grape variety and aging process with an ‘easy to drink’ section to ease newcomers into this new spirit.

To celebrate the launch of this new grappa bar, Vizio is hosting an exclusive Grappafest tasting night on Tuesday November 19th to give drinkers the ultimate grappa-fuelled experience. For just $55 per person, you’ll be treated to tastings of up to 12 varieties of grappa along with grappa-infused cocktails plus a selection of paired chocolates, cheeses and biscuits. Aside from sipping your way through delicious Italian spirits, you’ll also be able to meet and greet with Australia’s top grappa suppliers, with experts on hand to educate drinkers about how grappa is best served. To top off the night, head chef Salvatore D’Alterio (who also recently represented Australia at the Barilla pasta world championships), will be in the kitchen whipping up (you guessed it) delicious housemade pasta all night long.
